Crispy Roasted Green Peas

Happy New Year, sweet people!

When the calendar changes, we often feel a renewed sense of energy! This time of year is frequently paired with good intentions and resolutions to change or break patterns we feel ready to let go of.... Snacking can be one of them! But we have to remember that it's not snacking that's a problem, but what we snack on!

I love this simple recipe. It's crunchy, salty, super flavourful and healthy! How can you go wrong with peas? Not only are they delicious, they are also full of antioxidants, help us manage our weight, strengthen our immune system, and provide us with anti-inflammatory benefits. In researching a bit more about these lovely little nutrient-dense green seeds (yes, they are a seed!), I came across some other surprising nutritional and environmental benefits, like blood sugar regulation and possible cancer fighting properties! Peas just made it to my favourite list...

Crispy Roasted Green Peas

  • 2.5 c green peas (not canned. you can get great organic frozen peas, which is what I use!)
  • 1 1/2+ Tbsp avocado oil
  • 1/2 tsp each: salt, paprika, garlic (powder in this case, not for nutritional value, but for taste!), turmeric
  • 1/4 tsp each: pepper, cumin, coriander, cayenne (optional)

Preheat oven around 350 or 375F (my gas oven runs hot, so I used the lower setting, but on a regular over I would go for 375).

Pat peas dry as much as possible. toss with oil and spices. Pour onto baking sheet in single layer.

Shake pan every 8 to 10 minutes. As of 25 minutes, check regularly to ensure the peas don't burn. Mine took about 40 min total to get crispy. Be careful! They go from perfectly crispy to burnt in a matter of seconds!

You can also make these with only salt if you want something a simple and tasty, allowing the taste of the pea to shine a bit more!
