Just Beet It!
I'm in the midst of big transitions. I've been spending very little time in the kitchen, and relying way too much on foods that aren't supporting me... So in an effort to get back into the habits that will help keep me grounded, I turned to french fries!! These puppies are delicious, I promise. AND they're healthy.
Beets are awesome. They've got this amazing sweetness and they are packed full of fibre. Plus they offer so many nutritional benefits like helping to lower your blood pressure, reducing inflammation and supporting your liver!
This super simple recipe will tickle your taste buds and requires almost no effort at all!
So go ahead, crank up the volume on this song, and just beet it!
Beet French Fries
- 2 large beets
- 1 tbs avocado oil
- sea salt to taste
- dash of chili flakes (optional)
- lime juice (optional)
Preheat oven at 375 F.
Wash and peel beets and cut into french fry shape (for a crunchier fry, make thinner strips). Toss with oil, salt and chili flakes (if using). Place fries on cookie sheet and bake for about 25 minutes, rotating and loosening the fries from the pan about half way. Beets should be slightly brown when done!
Sprinkle fries with a squeeze of fresh lime juice (if using) and enjoy!
